Our client is seeking a dedicated F&B Project/Operations Manager. His/her primary responsibility is managing all phases of the our clients Wines, Spirits, Cocktails, Beverages programme and providing supervisory guidance to catering services providers, facility management team and our employees in HK, including staff catering, executive dining services, guest services, meeting and conference rooms, event and collaboration spaces, and every aspect of the guest journey.

Project management -

  • Drive project delivery proactively, balancing planning, scope, schedule, budget, communications and risks
  • Ensure the project have a clearly defined scope and objective, which is agreed with relevant stakeholders
  • Articulates to stakeholders the targeted benefits and takes joint responsibility for benefits realization
  • Report progress, issues, dependencies and risks to project or programme leadership and committees as appropriate and make recommendations to influence decision-making in order to maintain progress towards delivery
  • Working with stakeholders to ensure project deliverables are met
  • Develop detailed project plans to track progress
  • Report and timely escalation to management as needed
  • Create and maintain project documentation, plans and reports in line with Change Framework

Beverage Research and Development -

  • Creates and manages the new product development pipeline portfolio.
  • Collaborates cross-functionally to drive the Customer to Concept process to bring new products to launch.
  • Identifies new trend and opportunities by analyzing and defining market share, competitor market share, and available market share by product market.
  • Provides leadership and support for the design, development, refinement, and implementation of products by initiating research to identify consumer needs; develop new products to meet consumer needs; research consumer acceptance of products; work with production to identify process improvement.
  • Prioritized new concepts/products through the development process which includes: -
  • Formula and costing creation
  • Customer/Market test
  • Production Scale up
  • Responsible for Performance Evaluation Analysis.

Wine Management -

  • Create and update the wine list in coordination with preferred wine supplier and catering providers
  • Responsible for food and wine pairings
  • Advise multiple stakeholders or event planners on wines based on their personal tastes and food choices
  • Review the cost structure of different varieties of wines and prices, negotiate purchase prices with vendors
  • Ensure wines are served at the right temperature and taste, and within the proper glassware
  • Manage the wine cellar and ensure its fully-stocked
  • Organise wine-tasting days or "wine of the month" events

Operation's Site Maintenance -

  • Support the Head of Hospitality Services to oversee all aspects in overseeing catering and event facility maintenance and implementation.
  • Conduct monthly walk-thought with the Corporate Services - Facility Management team to review all the back-of-house set-up, including operation licencing status review.
  • Manage the pantry operations.

Requirements and Skills:

  • Diploma / Degree in Food & Beverage, Wine Study, Hospitality Management or related disciplines with attaining related wine certifications or equivalent to Master Sommelier level a minimum of 10 years of relevant working experience in 5-star luxury hotels.
  • Excellent command of both spoken and written English. Cantonese speaking is also preferred
  • Innovative, profit-driven and strong business acumen
  • Experience working with cross-functional teams and ability to influence peers
  • Attention to detail and excellent organisation skill
  • Outstanding interpersonal and communication skills with a proven ability to communicate effectively and confidently at all levels.
  • A desire to find ways to improve services delivered continually
  • Good knowledge of Microsoft Word, Teams, SharePoint, Excel and PowerPoint; knowledge of Confluence and Jira is a plus
  • Excellent verbal, written and presentation skills required in English; other language abilities are advantageous
